Magnificent Mom's day Muffins

Mother's Day for me is....  Memories of being in the kitchen creating  mis-shaped pancakes, often burnt on one or both sides. scrambled eggs, OJ, hot hot MJB coffee and flowers ripped fresh from mom's garden... All of this being brought in on a tray to serve her breakfast in bed!!!
I don't ever recall having breakfast trays in our home growing up, so breakfast was crammed on a cookie sheet w/ one of mom's best kitchen towels
After a early episode of a tippy breakfast tray, warm syrup, hot hot coffee, and my mom under it all.  Mom spoke in a tone that could be heard within a 15 mile radius.  "Plllleeeeasssee do not serve  me  G#!D@&!F!~@*&#?>! breakfast in  bed! Bed's were for sleeping, not eating!!!".
  Fortunately, Mom was able to enjoy many future Mothers days unscathed around the dining room table, and I still derive great pleasure from sharing food with family & friends, and can still laugh over most culinary disasters.

Make Over Mothers day break- fast 
In honor of mom's everywhere I wanted to share a fun remake on breakfast muffins.
After you have a baked a fresh batch of muffins- Invite your favorite mom for a walk to a neighborhood park,  or just spread a big blanket in the backyard- 
I recommend you take the walk first it is good for you both!  
In your backpack include a thermos of coffee w/ extra cups and some fresh muffins,  add some sliced oranges, or fresh berries in a bag as  a nice way to finish your snack.  Sitting outside you can also  sneak in some extra vitamin D from the sun!

Magnificent Monkey Nut Muffin

Cook Time: 20 Minutes
Ready In: 35 Minutes

"modified banana nut muffin recipe makes a great breakfast on the run- bring two with you and enjoy with a friend! The crunchy topping is optional if your watching your sweet intake.
INGREDIENTS:
1 1/2 cups whole wheat flour
1 teaspoon baking soda
1 teaspoon baking powder
1/2 teaspoon salt
3 ripe bananas, mashed
1 cup chopped walnuts
1/2 cup honey
1 egg, lightly beaten
1/3 cup butter, melted
1/4 tsp Vanilla
Topping: (optional)
1/3 cup packed brown sugar
2 tablespoons all-purpose flour
1/4 teaspoon ground cinnamon
1 tablespoon butter (chopped in bits)
DIRECTIONS:
1.Preheat oven to 375 degrees F (190 degrees C). Lightly grease 10 muffin cups, or line with muffin papers.
2.In a large bowl, mix together 1 1/2 cups flour, baking soda, baking powder and salt. In another bowl, beat together bananas, sugar, egg and melted butter. Stir the banana mixture into the flour mixture just until moistened, fold in chopped walnuts. Spoon batter into prepared muffin cups.
3.In a small bowl, mix together brown sugar, 2 tablespoons flour and cinnamon. Cut in 1 tablespoon butter until mixture resembles coarse cornmeal. Sprinkle topping over muffins.
4.Bake in preheated oven for 18 to 20 minutes, until a toothpick inserted into center of a muffin comes out clean.
