Meatless Monday? try Polenta Black Bean Casserole

During cold winter months,  knowing that you can come in from work or working out to a piping hot meal with little preparation time can be a life saver.

Polenta & Black Bean Casserole  is a meal that provides Fiber, Potassium, Vitamin A, Vitaman C, Protein, and even a little Iron!    This recipe is a terrific option on Meatless Mondays-   I like to serve this on a bed of Arugula, with a few cherry tomatoes, and slices of avocado-  It's a sneaky way to work in your green leafy vegetables and the healthy fat contained in Avocados.  The best part is enjoying the left overs for lunch or dinner.
