Recently, I have had some very bone chilling reminders that we are here together for a minute. Things around you become even more precious and delicate in the grand scheme of things when you see the road may not be infinite. This motivates me even more to develop my personal skills to better help each of YOU accomplish your dreams.

Our health care reform starts with what we put into our mouths to fuel our bodies.

- Extra weight we are carrying around
- the likelihood of developing a chronic or life limiting illness.
As a Certified Fitness Nutrition Specialist -FNS, I look at at the science behind nutrition. The Center for Disease Control has indicated that because of the way we are currently eating, 1 in 3 Americans will have type 2 diabetes by 2050! Harvard University has shown that 90% of behavioral and lifestyle factors can PREVENT type 2 diabetes!

In the meantime, enjoy this recipe for Veggie Nuggets, It is heart smart alternative to fried Chicken Nuggets. Enjoy them as an awesome between meal grab and go snack hot or cold, or heat them up and serve 2 per serving with a tossed Salad for dinner-

VEGGIE NUGGETS |
Adapted from Gluten Free living Magazine
Makes 12-18 nuggets (double the batch and freeze the unbaked nuggets to use later)
Ingredients:
1 large cauliflower
1 stalk of broccoli (crown)
4 eggs
3/4c gluten free breadcrumbs (or toast your g.f. bread and crumble to make your own)
1/2c grated Parmesan cheese
3 tsp Italian seasoning (mix together equal amounts of crushed dried basil, oregano, cumin, pepper, dash salt)
Extra virgin Olive oil
Directions:
Turn oven to low broil (425+)
Slice cauliflower & broccoli into 1/4" slices toss into large bowl sprinkle with Extra virgin Olive Oil & a couple of large pinches (appx= 1tsp) of Italian seasoning toss til lightly coated.
Place slices on a parchment paper covered baking sheet under broiler check and turn every 5minutes until golden brown- appx 15 min.
Remove from oven and let cool. place broccoli & cauliflower into a food processor and pulse until thoroughly processed.
Add eggs, bread crumbs, Parmesan cheese, and remaining Italian seasoning to the veggie mixture, pulse until evenly combined. (if the veggie paste is too sticky add more breadcrumbs).
Using a cookie scoop, place the veggie nugget scoops on to a parchment lined baking sheet and bake for about 15 minutes until golden brown.
let cool completely before storing in a sealed container in the refrigerator for you grab and go snack or quick addition to a meal!
